Recipe — Chinese Sweet and Sour Ribs
Serves 4-6
2 lb St Louis-style ribs
20 grams Ginger, whole
2 Tbsp Cooking rice wine (Chinese)
1 tsp Salt
2 Star anise
3 Tbsp Chinese black vinegar
3 Tbsp Rock sugar or white sugar
1 tsp Soy sauce
2 green Onion, whole
1 Tbsp Cooking oil

6 qt sauce pan
Large perforated spoon
1) Separate ribs and cut into 1” lengths.
2) Fill a 4 qt sauce pan 1/2 full with water. Add ribs, ginger, rice cooking wine, green onions, salt, and star anise. Bring mixture to a boil and boil for 15 mins. Remove ribs from mixture and place in a medium mixing bowl.
3) In a 6 qt sauce pan heat the cooking oil on low and add 2 Tbsp sugar. Stir and allow the sugar to cook until it starts to bubble. Add the ribs and continue to stir. Add one cup water and add 2 Tbsp vinegar and soy sauce. Cook 10 more minutes.
4) When the sauce starts to look dry on the ribs add the remaining sugar and vinegar. Quickly mix until ribs are coated with sauce.
